Moroccan Carrot Salad

Ingredients
- 1/4 cup carrot diced
- 1/4 cup cauliflower diced
- 1/4 cup courgette diced
- 2 tbsp capsicum diced
- 2 tbsp red onion diced
- 1/4 cup canned chickpeas
- 1/2 cup green leaves (mustard, spinach, rocket) shredded
Dressing
- 1/4 cup greek yoghurt
- 1 tbsp mint chopped
- 1 tsp liquid honey
- 1 tsp moroccan spice mix
Instructions

Combine all salad ingredients and season lightly.
Mix all dressing ingredients and stir into salad.
