Moroccan Carrot Salad
Servings: 2
Ingredients
  • 1/4 cup carrot diced
  • 1/4 cup cauliflower diced
  • 1/4 cup courgette diced
  • 2 tbsp capsicum diced
  • 2 tbsp red onion diced
  • 1/4 cup canned chickpeas
  • 1/2 cup green leaves (mustard, spinach, rocket) shredded
Dressing
  • 1/4 cup greek yoghurt
  • 1 tbsp mint chopped
  • 1 tsp liquid honey
  • 1 tsp moroccan spice mix
Instructions
  1. Combine all salad ingredients and season lightly.

    Mix all dressing ingredients and stir into salad.
