Pizza Pizzazz

Sundays deserve comfort food and last night’s Vegetarian Pizza was very comforting on several levels. First it was easy, secondly it used up left-overs, thirdly it was scrumptious, and lastly it didn’t cheat with items that do not belong on pizza (you know, tofu or roast pumpkin).

No real recipe here, a list of goodies and some description of how I put our pizza together. Let your inner chef shine!

I made the base using the dough cycle on my bread machine; but use your favourite base, purchased or otherwise.

List of Ingredients I used:

  • Pizza base
  • Tomato Sauce
  • Onion, garlic, spinach
  • Capsicum – essential flavour was awesome
  • Mushroom – nice but not essential
  • Pineapple
  • Olives
  • Feta
  • Mozzarella
  • Avocado
  • Sour cream
  • Red onion rings

Step 1: Quarter 1 red capsicum and place on grill pan under hot grill until skin blackens. When capsicum has cooled slightly rub skin off and slice into strips. (This can be done early)

Step 2: Finely dice some onion, chop a garlic clove or 2 and shred some spinach from the garden. Saute onion & garlic in a little butter with salt & pepper to taste.  When onion is soft add spinach and wilt.

Step 3: Turn oven to bake and reduce temperature to 220C. Smother pizza base with tomato sauce, then spinach and onion mix. Next place capsicum strips on pizza.

Step 4: Check refrigerator for bits and pieces you need to use up and something delicious for the sake of it. I found some pineapple, feta, mushrooms, olives (ok they would have kept but what is pizza without olives?) mozzarella (I would have used Cheddar if I had to), red onion rings and my luxury was an avocado.

I sliced and sauteed the mushrooms in butter for a minute or so, cut the feta into small chunks, placed everything  on the pizza and covered generously with mozzarella. The avocado comes later.

Pop the pizza in the oven for 25 minutes. Remind hubby he is on chip duty, and grab a glass of well deserved beverage of choice.

While pizza is cooking mash avocado with 2-3 tablespoons of sour cream. 5 minutes before pizza is ready dollop avocado cream on pizza and place back in oven to finish. Voila! Pizza with Pizzazz!
