Power Grain Salad

A handy grain based salad, serve as a refreshing lunch dish or as a substantial side for dinner.

There are so many grains available to the home cook today:

  • Farro
  • Freekah
  • Quinoa – White, Red, Black
  • Buckwheat
  • Spelt

to name a few, use your grain of choice – I like Farro but it is difficult to find in NZ at the moment so just add what you have on hand.

Ingredients
Salad
  • 350 ml water
  • ½ tsp turmeric
  • 1/2 cup Farro
  • ¼ cup pitted & chopped dates
  • ½ red onion - diced
  • ½ cup celery - diced
  • ¼ cup parsley - finely chopped
  • 1 red apple - cored & diced
  • ¼ cup whole almonds - toasted
Dressing
  • 2 TBSP lemon juice
  • ¼ cup greek style yoghurt
  • 1 TBSP honey
  • 1 TBSP olive oil
  • 1 clove garlic - crushed
  • ½ tsp curry powder
  • salt & pepper
Instructions
  1. Cook farro in salted water with the turmeric, uncovered for 20-25 minutes until soft but still chewy. Drain, rinse, and cool.

  2. Combine prepared dates, onion, celery, and parsley with farro.
  3. Combine all dressing ingredients in small blender until mixed. Prepare apple and add dressing to cover (this prevents apple browning). Add apple and dressing to salad. Cover and refrigerate till needed.
