
This is a useful recipe for winter vegetables using pumpkin as a stock.
It does need some thinking ahead if you are using dried beans as they need to be soaked in water overnight. We use whatever beans we have from our Autumn harvest – borlotti, or kidney, emu beans etc. However, a 400 gm of tinned black beans, or butter beans would work just as well.
The stock is made from boiled pumpkin and the water used to cook it in, this makes a very watery stock that will thicken as the Hot Pot cooks.
The onions are slowly caramelised until reduced by 2/3.
Roasted Vegetables: I use a mix of potato, kumara, parsnip, carrots,beetroot etc.
These steps can all be done at the same time and after that it is quite quick to come together.
Dried Fruit: Dates are lovely to give a middle eastern flavour, however, whatever you have on hand is fine.
A Lovely use of winter vegetables that is very flexible.
- 1/2 cup dried beans - soaked overnight
- 600 gm roasted vegetables
- 500 gm onions - diced
- 1 tsp turmeric
- 1/2 tsp cumin seeds
- 1 tsp coriander seeds - crushed
- 2 cloves garlic - crushed
- 1/2 tsp chili paste (or to taste) optional
- 800 gm pumpkin - peeled & roughly chopped
- 1/3 cup dried fruit
- 100 gm broccoli florets
- 1/4 cup sesame seeds - toasted

Roast the 600 gm of mixed vegetables until tender.

Rinse and drain beans, place in saucepan and cover with at least 2 cups of water. Bring to the boil, reduce heat and simmer for 30 minutes until soft.

Heat 1 tablespoon of olive oil in large fry-pan. Add onions and 1/2 a teaspoon of salt. Reduce heat and saute until very soft and beginning to caramelize.

Turn heat back up and add turmeric, cumin seeds, garlic, coriander seeds and chili paste (if using). Stir 1 minute until flavours release.

Place chopped pumpkin in a large saucepan and cover with water. Bring to the boil, reduce heat and simmer till soft - approx. 25 minutes.

Process pumpkin with water to a stock.

Add the roasted vegetables, the cooked beans, the stock, the broccoli, and dried fruit to the onion mix. Cook on low heat until everything is heated through, broccoli is tender, and sauce has thickened. As sauce thickens you may need to stir the mix.

Sprinkle with toasted sesame seeds.
