Cauliflower Fritters

It would be great if all my cauliflower looked like this, unfortunately they don’t. Many do not form a tight head, some are more yellow than white, and some even look like sprouting broccoli. Most of this is caused by growing in too warm a climate, but today I want to give you a recipe that uses cauliflower that is not so pretty to look at.

Spiced Cauliflower Fritters with Yogurt Dip

Ingredients
  • 1 tbsp olive oil
  • 1/4 head cauliflower - finely chopped
  • 2 cloves garlic - crushed
  • 1 small onion - finely diced
  • 1 tsp curry powder
  • 1/4 tsp ground cumin
  • 1/4 tsp ground coriander
  • 1/4 tsp ground cinnamon
  • 1/2 cup self-raising flour
  • 3/4 tsp salt
  • 4 eggs - beaten
  • 1/4 cup milk
  • 1/2 cup cheese - grated
  • 2 tbsp parsley - chopped
  • 2 tbsp oil - for cooking fritters
  • 1 lemon - cut into wedges, to serve
Yoghurt Dip
  • 1/2 cup natural unsweetened Greek yoghurt
  • 1/2 cup grated cucumber - juice squeezed out
  • 2 tbsp mint - chopped
Instructions
  1. Heat oil in a large fry pan on medium heat. Fry cauliflower, garlic, onion and spice mix until cauliflower and onion are soft (5-6 minutes).
  2. Whisk flour, salt, eggs, milk, cheese and parsley together. Add cauliflower mixture and mix together.
  3. Heat oil in a large fry pan (preferably non-stick) and cook tablespoonfuls of batter for 2 minutes on each side until golden brown.
  4. Mix yoghurt, cucumber and mint together. Serve fritters with yogurt dip and a lemon wedges to squeeze over.
